Ruby Queen Beets are bright red with short tops. The semi-globe roots have a sweet, buttery texture. For best flavor, harvest when the root’s diameter is 4-5 cm (1 1/2-2″). Roots may be used fresh, diced, canned, pickled or frozen.

Preparation Ideas: The skin on beets is easiest removed after beets are roasted, steamed or boiled. Once cool enough to handle, the skin is easily removed with a paper towel.

Days to Maturity: 48 to 55 days

Planting Depth: 1.3 cm (1/2″)

Instructions: Sow in rows as early as the ground can be worked. After planting, press down covering with soil firmly. It performs best in full sun and well drained soil.

Suggestions: Plant near bush beans, cabbage, lettuce, or kohlrabi but away from pole beans.
